Big Winner

No... this is not an April fool's post, but did you see Wealthy Tipping Point? She totally got me! I actually called PerMa to tell her the news before it dawned on me what was going on!


However Caitlin's post plus an event this afternoon reminded me that I actually am pretty good at winning random things.


This afternoon I won Caroline's waffle give away (yahoo!!)


I won Kaitlin's coaches oats give away a few weeks ago


I actually tend to win those games where you grab the stuffed animal with the claw (I don't know whether to brag about this or not)

And the best thing I've ever won?


My sophomore year of high school, I won a 58 inch flat screen TV with 5 dvd changer and home theatre system in a raffle.


No I'm not lying it's in my house right now, I miss it very much when I'm at school watching The Office on my laptop.

Something I did not win at today? Satisfying my hunger... hey BPS round two! I did try very much though!


For lunch I had leftover Annie's mac and cheese but today I added baked beans, spinach and mushrooms. Plus grapes which are needing to be eaten!

I wasn't hungry for quite some time for dinner but then suddenly I was starving again (hate that) so I made a quick tofu scramble. I used

1 tbsp nooch


salt and pepper


an entire green pepper


Plus Ezekiel sesame toast with smart balance light and fruit spread.

My throat hurts

And I swear if I get sick there will be tears. I need some sleepy sleep so I'm sorry for the speedy recap!DSCI0276.JPG


Lunch was a salad with a serving of barley, sweet peas, black eyes peas, 1/2 a big tomato and 1/2 a cucumber topped with superfruit berry vin plus a strawberry chobani repackaged for no chance of bursting. Oh and bio exam studying =)

Someday I will have DINNER for dinner I promise but my eggs actually expired yesterday and for me redundancy trumps wasting food. I did put a spin on my omelet. I mixed the eggs with cinnamon and stevia and then stuffed it with macadamia nut and cashew butter.

And topped it with microwaved frozen bloobs and banana slices with some baked sweet potato slices on the side. I've been way snacky again tonight... once again my hunger seems to wait until I get back to my room in the evening, if anyone has a solution please let me know!

Let's talk Politics

Don't worry we won't get too in depth... I don't want any hate mail or anything! I've never talked politics before basically because that's not what the blog is about ,but, fun fact about me is I am very interested in them and grew up in a somewhat political family.

We would watch the Daily Show and Colbert Report every night during dinner! I also spent my Halloween weekend on a whirlwind trip to DC to go the the Rally to Restore Sanity!




I've mentioned before that I go to school in Wisconsin and if you are familiar with what is going on at the WI capital you can imagine that it has spread to a tiny, liberal arts, hippie campus like mine. Given my new found dislike of Scott Walker and my love of activism you can imagine how dumb excited I was to be standing right outside of my dorm, on my campus of merely 1250 students, roughly three feet from this person..

Reverend Jesse Jackson.... I DIED.


I sadly didn't get to meet or talk to him but I probably would have fainted anyway, I was nervous taking pictures! He was here with the Autonomous Solidarity Organization and WI senator Tim Cullen to promote voting to stop the bill that is currently being passed in WI.

For lunch I packed a salad with 1/2 a bag of spinach, a red pepper, 1/2 an avocado, salsa, the rest of my chili-lime white bean dip and nooch. Plus two pieces of Ezekiel sesame bread.

I was SUPER snacky this afternoon


I had this bowl x3 plus some more not plated *by the way I'm having NO issue making it through my twelve bags of pretzels... I'm already down to 10, if the addiction is wrong I don't want to be right!*

plus a zillion handfuls of butter cashews and dark chocolate almonds (flavored nuts are too dangerous)


I took a break and shockingly actually got somewhat hungry for dinner though not starving so I made some scrambled egg whites with cheese, fruit and a sprouted grain english muffin with smart balance and fruit spread.

You may have noticed that I have recently been mentioning friends more, posting later and actually going out on the weekend. For the first time in many months I have somewhat of a social life.


A major part of eating disorders is self isolation. Your ED convinces you this is for many reasons. You're better than everyone else, you only need your ED, you really want to be alone..blah blah blah.


The main reasons I have been reaching out to people is because I was sick of being alone. That fact in itself shows progress towards recovery. In addition the people I have been reaching to are those who I feel I can tell about what I am going through because you cannot fully recover without support. It is a great distraction from your ED voice and can make you remember what is really important.


I used to love to go out on the weekend. I loved being with people most of the time. My ED had convinced me that I no longer liked people but of course... it was a lie. I have been having a great time reconnecting with people and making new friends.

For lunch put together some fun fajita type things (scientific term). I got corn tortillas at the store today so i topped each with laughing cow, a bunch of chili-lime white bean dip, veggies and salsa. I had grapes on the side which were so appealing for whatever reason.

Per usual for me my appetite has not been on point all day. I got a little hungry for a snack so I mixed up PB2 and jelly sauce with some pretzels

Amber Waves of Grain

I another package today...

12 bags of organic spelt sourdough pretzels... and I only have 6 weeks left of the semester... oops.


The big question, why did I order them? Well if you are a reader of the blog you know that I absolutely love pretzels. And if you are not a regular reader I will tell you know that I love love love pretzels. However what I don't love are empty calories which don't fill me up, such as refined carbs, such as pretzels.

And have 4 grams of protein! not bad at all for a crunchy snack food!

I tried a few ( love how big they are) with some apple slices and salted cashews. It was a legit filling snack. The pretzels are really good! They are crispier than other pretzels which I think is a good thing and other than that the taste is like delicious sourdough pretzels!

For lunch I had a random snacky plate of veggie chik'n nuggets, triscuts with cream cheese and fruit spread and veggies with chili-lime white bean dip

For dinner I cooked up quinoa and baked some tofu. Then stir fried the quinoa with veggies in braggs and red pepper flakes and topped it all with sunflower butter. Delicious and easy, everyones favorite!

Personal Catch-Up

Do you ever feel like your life is as much work as your work/ school life? My afternoon class was canceled today giving me an extra two hours. Instead of relaxing I celebrated the fact that I could finally catch up with things in MY life instead of school. I did things like


E-mail my grandparents and some friends


wash my hair/shave my legs


Read your blogs (finally!)


Update my iTunes


Paint my nails


and even some homework that's not due for a while so I wasn't stressing


About 30 minutes after breakfast I had this (granola crisps and PB)

Then 45 minutes later I was starving but I couldn't eat my lunch because I had some stuff to do so right before I left I made an almond butter and jelly wrap to go.

I was into seeing people celebrating before noon =). There was also a guy with a beer at 8:30 this morning... in the gym... lifting weights, I laughed out loud.

For lunch I broke the eat your colors rule to honor the holiday! I had a huge salad with spinach, asparagus, cucumber, broccoli, lima beans, sweet peas, snap peas and avocado. Dressed in dijon, white wine vin and garlic salt. It was a very good salad!

One thing I had to do this morning required me to go to the dining hall where I found fresh made, vegan, gluten free chocolate chip cookies! I totally had to grab one to go with lunch. It was delicious! A great soft texture, sweetened (at least partly) with honey and I even detected some banana. Points for my school!

while I had the peanut butter out some sweet potato chips made their way into it as did the rest of my pretzels (can we talk about how I killed a 3/4 pound bag of pretzels from Sunday until today... no shame)

Dinner was vegan "cheesy" Mediterranean lentils (recipe posted tomorrow!) with sweet potatoes roasted with evoo, apple cider vinegar cinnamon and paprika and cucumbers with more hummus.

Hump, Sun, Sandwich, Cookies, Boys

It took mw a hot minute to get over the hump today! Running back and forth between the library and my room to get my report to print, hustling to class and work meeting all after breakfast and before lunch! Lunch was half of this bagDSCI0011.JPG


Beefed up with eggs, honey roasted peanuts and a bunch of veggies drowned in Bragg's liquid aminos. It was an awesome combo, like fried rice! Plus an orange. See what's under my lunch?DSCI0003.JPG


Grass! I ate outside in the sun today!! My friend Patrick found me alone doing homework over lunch as usual so he and his roast beef/frito sandwich actually joined me!

One snack plate of a few. I also had the same snack as yesterday because it was so good and some sweet potato chips.

Dinner was a veggie chik'n pattie (the grilled kind instead of breaded like a normally get, I really liked it!). On sesame toast with cheese, hummus, tomato, dijon and ketchup. Best sandwich I have made in a good while!


Also a spinach, red pepper, mushroom salad with superfruit berry dressing and a pickle.

Main dessert, more nuts and chocolate were had as well. I've gotten SO much work done this week that around 7:45 I really felt it un-necessary to keep going to I took more advantage of my new toaster!

Cookies!! Basically this recipe but slightly adapted because I don't have everything. I used some stevia and a mix of agave and honey with more than it calls for in place of both sugars. I also changed the mix-ins to dark chocolate chips, raisins and cinnamon. I had 1/2 of one and they are good! I actually could have used more PB but still delish!


I only had 1/2 of one because I'm hoping to save the majority in case someone is interested in them. One of the benefits of Project New Nutrition is a re-newed interest I have all of a sudden been having in boys ( I was way not into for a while). My lunch friend today is one example but a better one is my bio buddy, super cute and on the track team (runner!!!!). I have bio again Friday so some of the cookies have to last until then, I hope he's not allergic to PB.... which would be a deal breaker anyway!


Watching the new Glee and about to eat probably a few mugs of cereal, hopefully will be on a more regular blogging schedule soon! Love you all!!

What's your favorite cookie to eat and bake? I love to bake peanut butter cookies and sugar cookies that are fun shapes. I have recently been craving shortbread so that is clouding my favorite eats answer.

Great Eats Day!

I actually love when the beginning of my week is busy because it means that it winds down nicely! Basically all of my food today has been nothing short of amazing... love that!


I packed a mexican salad for lunch

In the mess, spinach, red pepper, avocado, nooch, salsa, red onion, jalepenos, black beans and garlic salt


And for the second time I used my new toaster oven...

Homemade Spicy Brown RIce Chips


Ingredients


Cooking spray or olive oil


1 brown rice wrap


cumin


chili powder


How To


Preheat oven to 300


Either spray or brush the wrap with oil on both side. Sprinkle one side with cumin and one side with chili powder. Cut into as many chips as you would like. Place on cooking sheet and bake for 6-7 minutes (I did mine for about 9 and clearly they were a little brown... still very good though!


I can't wait to make these again and with different spices!


I was still hungry so I had one of the emergency granola bars I keep in my backpack.

I cut up a flat out and toasted it (obsessed) topped each piece with nut butter, cinnamon, honey and raisins. Let's talk about how there are four kinds of nut butter represented on this plate... I couldn't decide =).

This looks crazy but it was almost too good for words.


I made Sarah's broccoli-feta stuffed sweet potato. I followed the recipe for the most part except I made the filling in the microwave. I also added mushrooms and topped it with green olives... because I love olives!
