I am Going to Turn Into

A gigantic nut. Without a doubt. Let's just sum this up. As seen in my morning post, this weekend I bought salted cashews, dark chocolate almonds and butter toffee peanuts.


In the mail today from the amazing PerMa I got the same dark chocolate almonds, dill pickle cashews, butter cashews, cashew butter and almond, peanut cashew butter (seen above).

From myself in the form of amazon I got cashew butter (good thing I like cashews), macadamia nut butter and PB2. I need to cancel my amazon account... although PerDa did just front me some extra cash <3... nut butter enabler =)

So that's four new jars of nut butter and five new jars of nuts... my good cholesterol will be through the roof!

Can we just talk about how all of this sparked my nut butter tooth to an insane level? I started with this snack.

I continued to sample most of my new products through the afternoon. I wasn't starving for a "real meal" for dinner so I made a bowl... with more nuts.

Yogurt, sweet potato, pretzels, cheerios, all kinds of nuts, dried fruit and nut butter and honey. Totally random but still healthy so I'm ok with it! It actually started here...

But by the time I sat down to eat a handful of homemade snack mix (cashews, almonds, cheerios, dried cherries and raisins) appeared on it along with a little drizzle of sunflower butter.


I also had some dark chocolate and more butter cashews. What is with me and breakfast for dinner lately? I have so much dinner type food to use up before school is over I hope my want for it comes back soon!

For lunch I mixed a cup of lima beans with feta and cranberries and dijon plus two corn tortillas and an apple. So there was a little green and freshness today =).


My nut butter escapade was delicious but I am jonsing for greenage! I have my big salad packed up for lunch tomorrow! For some reason I love when I crave vegetables, it makes me feel like a health dork =).


Now what someone has to convince me to do is NOT order more barney butter... I'm very much almost out!

Are you an online shopping addict? I browse a lot but the only place I order from on the regs is amazon... probably because they have my card number saved =(.


Favorite type of nut/nut butter? I refuse to pick, clearly I love them all! I do go in kicks (on a cashew one now) and I will say that I always prefer crunchy over smooth though I'm not opposed to smooth! I hope I get on a walnut kick soon... I have a TON!

Reclaiming Spirit

I have that quote next to my mirror at home. For the majority of my life I was known among family and friends and the laugher. I laughed loud, often, until I cried. People knew my laugh, people said they loved my laugh. I loved my laugh, I loved to laugh.


Disordered eating takes a tole on your body, mind, relationships and spirit. I have been doing very well in the body and mind field.. i have recently started taking steps in the relationship and spirit as well.


Today I worked on a project with two people in my biology class who I am quickly making friends with, something that has not happened in some time. As we worked Murphy's Law kicked in hard. We had no idea how to use the program, the printer was out of paper, or professor could not tell our good graph from our bad graph example... it was hilarious. We all cracked up together the entire time.


I have not laughed the much or that hard in the past eight months combined. I am getting my spirit back. I got my laugh back, I want to tell my bad habits "You will not take my laugh ever again"

I ordered more PB2 and it came with a sample of these vanilla muffins . I'm not a fan of low carb products just because I need and love carbs so I hate to say that these were actually TOTALLY delicious. Especially topped with PB2!

Dinner was a simple veggie and cheese omelette, sprouted grain english muffin with smart balance light, blackberry fruit spread and sunflower butter and mango slices.


On a side not I got an e-mail from PerMa today with the subject "shopping like a blogger"

Personal Catch-Up

Do you ever feel like your life is as much work as your work/ school life? My afternoon class was canceled today giving me an extra two hours. Instead of relaxing I celebrated the fact that I could finally catch up with things in MY life instead of school. I did things like


E-mail my grandparents and some friends


wash my hair/shave my legs


Read your blogs (finally!)


Update my iTunes


Paint my nails


and even some homework that's not due for a while so I wasn't stressing


About 30 minutes after breakfast I had this (granola crisps and PB)

Then 45 minutes later I was starving but I couldn't eat my lunch because I had some stuff to do so right before I left I made an almond butter and jelly wrap to go.

I was into seeing people celebrating before noon =). There was also a guy with a beer at 8:30 this morning... in the gym... lifting weights, I laughed out loud.

For lunch I broke the eat your colors rule to honor the holiday! I had a huge salad with spinach, asparagus, cucumber, broccoli, lima beans, sweet peas, snap peas and avocado. Dressed in dijon, white wine vin and garlic salt. It was a very good salad!

One thing I had to do this morning required me to go to the dining hall where I found fresh made, vegan, gluten free chocolate chip cookies! I totally had to grab one to go with lunch. It was delicious! A great soft texture, sweetened (at least partly) with honey and I even detected some banana. Points for my school!

while I had the peanut butter out some sweet potato chips made their way into it as did the rest of my pretzels (can we talk about how I killed a 3/4 pound bag of pretzels from Sunday until today... no shame)

Dinner was vegan "cheesy" Mediterranean lentils (recipe posted tomorrow!) with sweet potatoes roasted with evoo, apple cider vinegar cinnamon and paprika and cucumbers with more hummus.

Great Eats Day!

I actually love when the beginning of my week is busy because it means that it winds down nicely! Basically all of my food today has been nothing short of amazing... love that!


I packed a mexican salad for lunch

In the mess, spinach, red pepper, avocado, nooch, salsa, red onion, jalepenos, black beans and garlic salt


And for the second time I used my new toaster oven...

Homemade Spicy Brown RIce Chips


Ingredients


Cooking spray or olive oil


1 brown rice wrap


cumin


chili powder


How To


Preheat oven to 300


Either spray or brush the wrap with oil on both side. Sprinkle one side with cumin and one side with chili powder. Cut into as many chips as you would like. Place on cooking sheet and bake for 6-7 minutes (I did mine for about 9 and clearly they were a little brown... still very good though!


I can't wait to make these again and with different spices!


I was still hungry so I had one of the emergency granola bars I keep in my backpack.

I cut up a flat out and toasted it (obsessed) topped each piece with nut butter, cinnamon, honey and raisins. Let's talk about how there are four kinds of nut butter represented on this plate... I couldn't decide =).

This looks crazy but it was almost too good for words.


I made Sarah's broccoli-feta stuffed sweet potato. I followed the recipe for the most part except I made the filling in the microwave. I also added mushrooms and topped it with green olives... because I love olives!

I will be making this again... it is so so so so good. Just so good!

Happy Ending for a Sad Event

It actually wasn't too bad! it smelled like a lawn mower but was sweeter than expected. Can't say that I would take it in a larger amount but the shot was fine for sure!

I got the "very veggie" wrap. Cream cheese, FLA avocado, and a but load of veggies in a spinach wrap. Came with a ridiculously fresh side salad with honey mustard dressing.

Shared sweet potato strips! Oven baked... so good!


I killed my wrap, most of the salad, and finished that last few bites of PerMa's hummus wrap. We ate 99.9% of the sweet potatoes together.

One last time =). SImple butter pecan... delicious. I also made away with a good amount of salt water taffy and some dark chocolate coconut patties to bring back to school!


Tonight and tomorrow morning will be packing and tomorrow is traveling! I may not see you until the night so have a great Saturday!

I like to move it move it

Alright friends, just for a head up things may get a little crazy over the next three days. You know that my meals have been repetitive trying to use up food but I also found out last night that over the next two days (and mostly today) I will be moving to a new room on campus (long story). So between using food, packing up my entire room and food stash and packing for spring break... things may get some kind of bananas!


I've been doing decent using food, I had the last of my cottage cheese last night with some kashi honey sunshine and sunflower butter


I cut my workout a little short in favor of packing and saving energy for moving but I started with my last piece of whole wheat bread and end of the hummus

I did 40 minutes of bike intervals (did you see last weeks post? ) And then held plank for 3 minutes and side plank for a minute on each side.

In the mix is nuked sweet potato, yogurt, dried cranberries, ground flax, cinnamon and honey


Alright, off to pack, take a break for a mid term, pack more and start the move!
