Full Day

Did you see my post this morning? I hope it provided some kind of insight for some of you out there! I didn't post breakfast this morning because I normally eat while I post but today I had a breakfast "date"! That's in quotes because really I was meeting with my bio group to finish a paper we have due tomorrow.


I did have a pita with PB2 and fruit spread before hitting an interval bike workout. 10 min. warmup, 50 min. intervals, 10 min cool down.


I thought about packing some yogurt and cereal in an almost empty PB jar but instead I challenged myself with something I really wanted! We met at my schools coffee shop so I got

Whole wheat bagel topped with butter and cinnamon and a small iced skim latte for protein

Surprisingly the bagel kept me way fuller than even nut butter does! Maybe it has something to do with all of the crack butter toffee almonds that made there way into my mouth last night.


For lunch I packed a small spinach salad with strawberries, cucumbers, a big scoop of cottage cheese and wheat germ.

The star of the show though was these cinnamon roasted chickpeas with almond butter! Last night I roasted 1/2 a can of chickpeas in cinnamon and topped them with about a tablespoon of almond butter when they were still hot. I put them in the fridge overnight and had an amazing lunch treat!

Snack was the rest of my hummus =( mixed with a little nooch and baby carrots.

Dinner was an omelette. I can't believe I made it until Thursday without an omelette! It was actually just two eggs and some garlic, for whatever reason i haven't been feeling cheese lately.

With roasted broccoli and sesame toast with almond and peanut butter (you know I can't choose) and honey.

For dessert I had a fun bowl of PB2, quaker squares some banana and dark chocolate.


I also had two more spoons of nut butter and a little more cereal.

Don't Judge

My Monday was unfortunately ( or fortunately) fairly dull. Just class, homework, food and some baking. Good thing my eats were delish!

For lunch I made a spring chickpea salad with dijon avocado dip and topped with superfruit vin. I'm updating my recipe page and this will be on it! Had with a side of Mary's Gone Crackers.

I got this awesome poster in the mail today!!

I put it on the wall at the foot of my bed so it can motivate me right when I wake up =).


I snacked on about three stalks of celery and a gigantic scoop of almond butter.

For dinner I was CRAVING tofu, I've only had it twice in three weeks!! I got this kind over the weekend, I like it because you don't have to press it! I tossed about 1/2 of the block in EVOO, white wine vin, honey, black pepper and italian seasoning.

Free time means baking! I made a loaf of Elise's pumpkin bread with a few modifications. I used coconut butter instead of oil, oats instead of flour, less stevia plus I added pumpkin pie spice and cinnamon. DSCI0068.JPG


I had a piece with PB2 and fruit spread along with some dark chocolate chips. It is so moist and delicious! I may go back for a little more!

Travel Day Recap

Hi All!! I've missed you today! I currently write to you from Florida enjoying a very beach-y treat that is reveled at the end of this post!


My standard travel days from my school go taxi to bus stop, bus ride to Chicago, fly out of Chicago to wherever I'm going. I set my alarm for 7 this morning but woke at 5:45 with no chance of falling asleep... I was way too excited! So I decided to do some yoga.

I knew that this was going to mean I wasn't going to have time to sit for breakfast probably until I was on the bus so I had 1/2 and apple before I started and then munched on the rest as I got ready through the morning. I also had a mug of green tea to get started!

By 7 I was done with an intense flow, 7:45 in the cab, 8:25 on the bus on my way! Good thing I made breakfast travel friendly and it was the perfect delicious start to my break!

I'm super sad this is gone but I'm not gonna lie, once it got towards the end I have been so excited for these overnight oats!

Last night: oats, greek yogurt, milk, dash of vanilla, stevia packet, the last of the PB


This morning: Kashi honey sunshine, yogi cinnamon raisin granola, a few frozen strawberries that mostly thawed by the time I ate


so amazingly amazing (the girl next to me was trying HARD not to judge, I appreciated it =)).

Grabbed some travel essentials. I'm really excited to read that on the beach, any reviews? Plus if you like gum that kind tastes like watermelon jolly rancher!

whole wheat pita with laughing cow, fruit spread and the very last of my spinach, the last of my baby carrots (finally!) and chili lime roasted chickpeas. I had the sandwich first on the plane, munched on the carrots throughout the flight and the chickpeas as I waited for my mom's flight to land, worked great!


I also had my favorite warm weather drink to celebrate right when I landed =D.

Pineapple, tofu, tomatoes, zucchini and snap peas in ginger sauce so good! I finished it because it was actually light being mostly veggies, I only had a bite of the rice.


And to celebrate, also went for a beach staple

Ice Cream! I haven't had ice cream or a big dessert in forever so I went all out and I do not regret my choice =D

Specialty Diets

I am currently working on research for my semester long contemporary food movements paper on the raw food movement. My paper explores how this food movement relates to others similar such as the organic food movement and vegetarianism. The main difference I've found so far is the ladder two have a moral, larger ground that they base their reasoning on (animal rights and the environment being the main two) but the raw food movement seems to be solely based on the health of an individual. The research question that I will be posing is can the raw food movement be sustained as a social movement without the bases of a broader social movement?

I am a vegetarian and it did indeed start for broader social reasons though now I have added health into my reasoning!
Today's eats have been amazingly enjoyable! For lunch I had a salad with barley, green beans, some assorted other frozen veggies to finish off the bag, apple slice and a vegan boca burger

Topped it with dijon and white wine vinegar and had with a string cheese
This afternoon I invented a dip! I'l post the super easy recipe tomorrow 
"Protein Guacamole" with Triscut Thins... looks gross, tastes great! 

And for dinner I whipped up a chickpea dish that was quite good if I do say so!
Chickpeas cooked in veggie broth with onions and mushrooms and "gumbo file" seasoning (sassafras and thyme combo) with steamed okra

Although the star of the show was no doubt
Honey- cinnamon roasted sweet potatoes inspired by The Athlete's Plate

I pretty much followed the recipe... just scaled it down to Caitlin size =). 

Off to more research land, busy day tomorrow!
