My throat hurts

And I swear if I get sick there will be tears. I need some sleepy sleep so I'm sorry for the speedy recap!DSCI0276.JPG

Lunch was a salad with a serving of barley, sweet peas, black eyes peas, 1/2 a big tomato and 1/2 a cucumber topped with superfruit berry vin plus a strawberry chobani repackaged for no chance of bursting. Oh and bio exam studying =)

Snacking on some butter crunch cashews. pretzels and dried cherries (had more than pictured... trust)

DSCI0283.JPG

Someday I will have DINNER for dinner I promise but my eggs actually expired yesterday and for me redundancy trumps wasting food. I did put a spin on my omelet. I mixed the eggs with cinnamon and stevia and then stuffed it with macadamia nut and cashew butter.

DSCI0284.JPG

And topped it with microwaved frozen bloobs and banana slices with some baked sweet potato slices on the side. I've been way snacky again tonight... once again my hunger seems to wait until I get back to my room in the evening, if anyone has a solution please let me know!

Peace!

Caitlin

How often do you get sick? Um... never, that's why I'm so upset

Let's talk Politics

Don't worry we won't get too in depth... I don't want any hate mail or anything! I've never talked politics before basically because that's not what the blog is about ,but, fun fact about me is I am very interested in them and grew up in a somewhat political family.

201103292123.jpg

We would watch the Daily Show and Colbert Report every night during dinner! I also spent my Halloween weekend on a whirlwind trip to DC to go the the Rally to Restore Sanity!

I've mentioned before that I go to school in Wisconsin and if you are familiar with what is going on at the WI capital you can imagine that it has spread to a tiny, liberal arts, hippie campus like mine. Given my new found dislike of Scott Walker and my love of activism you can imagine how dumb excited I was to be standing right outside of my dorm, on my campus of merely 1250 students, roughly three feet from this person..

DSCI0272.JPG

Reverend Jesse Jackson.... I DIED.

I sadly didn't get to meet or talk to him but I probably would have fainted anyway, I was nervous taking pictures! He was here with the Autonomous Solidarity Organization and WI senator Tim Cullen to promote voting to stop the bill that is currently being passed in WI.

ASO Speaker

For lunch I packed a salad with 1/2 a bag of spinach, a red pepper, 1/2 an avocado, salsa, the rest of my chili-lime white bean dip and nooch. Plus two pieces of Ezekiel sesame bread.

DSCI0261.JPG

I was SUPER snacky this afternoon

I had this bowl x3 plus some more not plated *by the way I'm having NO issue making it through my twelve bags of pretzels... I'm already down to 10, if the addiction is wrong I don't want to be right!*

DSCI0266.JPG

Plus a peanut butter chocolate protein bar

plus a zillion handfuls of butter cashews and dark chocolate almonds (flavored nuts are too dangerous)

I took a break and shockingly actually got somewhat hungry for dinner though not starving so I made some scrambled egg whites with cheese, fruit and a sprouted grain english muffin with smart balance and fruit spread.

DSCI0275.JPG

Followed by a few handfuls of trail mix

(what is WITH me and the snack food!?)

I'm off to attempt at some homework but more likely fall asleep =)

Peace!

Caitlin

Are there any celebrities or political figures you have met or would love to meet?

What's your latest snacking addiction? PRETZELS AND NUT BUTTER... though that's not new =)

Reaching Out

Past Tips

Separation is Key

Recovery Tip 2: Reach out to othersDSCI0100.JPG

You may have noticed that I have recently been mentioning friends more, posting later and actually going out on the weekend. For the first time in many months I have somewhat of a social life.

A major part of eating disorders is self isolation. Your ED convinces you this is for many reasons. You're better than everyone else, you only need your ED, you really want to be alone..blah blah blah.

The main reasons I have been reaching out to people is because I was sick of being alone. That fact in itself shows progress towards recovery. In addition the people I have been reaching to are those who I feel I can tell about what I am going through because you cannot fully recover without support. It is a great distraction from your ED voice and can make you remember what is really important.

I used to love to go out on the weekend. I loved being with people most of the time. My ED had convinced me that I no longer liked people but of course... it was a lie. I have been having a great time reconnecting with people and making new friends.

DSCI0190.JPG

For lunch put together some fun fajita type things (scientific term). I got corn tortillas at the store today so i topped each with laughing cow, a bunch of chili-lime white bean dip, veggies and salsa. I had grapes on the side which were so appealing for whatever reason.

DSCI0191.JPG

DELICIOUS

DSCI0193.JPG

Per usual for me my appetite has not been on point all day. I got a little hungry for a snack so I mixed up PB2 and jelly sauce with some pretzels

DSCI0195.JPG

Hi, I'm Caitlin and I'm boring addicted to omelets. Veggie om-nom with mango, toast with smart balance, fruit spread and PB... come on you know me.

I feel my appetite slightly returning, I'll probably get in a dense snack soon... I'm going out again tonight =)

Peace!

Caitlin

Tell me about your best friend!

Full Day

Did you see my post this morning? I hope it provided some kind of insight for some of you out there! I didn't post breakfast this morning because I normally eat while I post but today I had a breakfast "date"! That's in quotes because really I was meeting with my bio group to finish a paper we have due tomorrow.

I did have a pita with PB2 and fruit spread before hitting an interval bike workout. 10 min. warmup, 50 min. intervals, 10 min cool down.

I thought about packing some yogurt and cereal in an almost empty PB jar but instead I challenged myself with something I really wanted! We met at my schools coffee shop so I got

DSCI0128.JPG

Whole wheat bagel topped with butter and cinnamon and a small iced skim latte for protein

Yes that is a checker board on the table

DSCI0131.JPG Yes I go to a tiny liberal arts hippie school... I love it =)

Surprisingly the bagel kept me way fuller than even nut butter does! Maybe it has something to do with all of the crack butter toffee almonds that made there way into my mouth last night.

For lunch I packed a small spinach salad with strawberries, cucumbers, a big scoop of cottage cheese and wheat germ.

DSCI0125.JPG

The star of the show though was these cinnamon roasted chickpeas with almond butter! Last night I roasted 1/2 a can of chickpeas in cinnamon and topped them with about a tablespoon of almond butter when they were still hot. I put them in the fridge overnight and had an amazing lunch treat!

DSCI0127.JPG

Snack was the rest of my hummus =( mixed with a little nooch and baby carrots.

DSCI0134.JPG

Dinner was an omelette. I can't believe I made it until Thursday without an omelette! It was actually just two eggs and some garlic, for whatever reason i haven't been feeling cheese lately.

DSCI0141.JPG

With roasted broccoli and sesame toast with almond and peanut butter (you know I can't choose) and honey.

DSCI0143.JPG

For dessert I had a fun bowl of PB2, quaker squares some banana and dark chocolate.

I also had two more spoons of nut butter and a little more cereal.

Quote of the day taken from a facebook status of one of PerMa's friends:

"Keep walking towards it"

Peace!

Caitlin

What are you currently walk towards? The status of recovered =)

What's your favorite non-dessert dessert food? Cereal or nut butter! Or both!

Reclaiming Spirit

"Laugh when you can, It is cheap medicine" -Lord Byron

I have that quote next to my mirror at home. For the majority of my life I was known among family and friends and the laugher. I laughed loud, often, until I cried. People knew my laugh, people said they loved my laugh. I loved my laugh, I loved to laugh.

Disordered eating takes a tole on your body, mind, relationships and spirit. I have been doing very well in the body and mind field.. i have recently started taking steps in the relationship and spirit as well.

Today I worked on a project with two people in my biology class who I am quickly making friends with, something that has not happened in some time. As we worked Murphy's Law kicked in hard. We had no idea how to use the program, the printer was out of paper, or professor could not tell our good graph from our bad graph example... it was hilarious. We all cracked up together the entire time.

I have not laughed the much or that hard in the past eight months combined. I am getting my spirit back. I got my laugh back, I want to tell my bad habits "You will not take my laugh ever again"

Some eats today

DSCI0001.JPG

Leftover roasted sweet potatoes with cottage cheese, raisins and cinnamon

DSCI0002.JPG

I ordered more PB2 and it came with a sample of these vanilla muffins . I'm not a fan of low carb products just because I need and love carbs so I hate to say that these were actually TOTALLY delicious. Especially topped with PB2!

DSCI0007.JPG

Dinner was a simple veggie and cheese omelette, sprouted grain english muffin with smart balance light, blackberry fruit spread and sunflower butter and mango slices.

On a side not I got an e-mail from PerMa today with the subject "shopping like a blogger"

PerMa TJ's.jpg

Blogger type purchases for sure =).

Peace!

Caitlin

What made you laugh today?

Fun weekend plans?

New Toy!

=D

DSCI0010.JPG

=D

DSCI0011.JPG

I'm too excited. There wasn't enough room in my old room but now that I have one all to myself, I can make space! I've already used it twice. Not in the fanciest way I wanted to but there will be fun creations to come I assure you!

DSCI0003.JPG

I came back to my room for a quick lunch. I had the rest of my tofu from last night, some in a wrap with cream cheese, fruit spread and spinach (it was actually really good though I wish I'd used laughing cow for the french onion flavor!)

the rest on the side dipped in dijon and tomato slices with white wine vinegar for a little bit of veg action.

DSCI0005.JPG

Dessert had on the go

In bio today I found out I have a huge project due when? Wednesday. We were apparently supposed to start over break... this passed me up due to the fact it's a partner project!! This is so unlike me so I panicked a little (and scared my poor partner). But in true Caitlin fashion I divvied up the work and got to my half as soon as I got in. Snacks happend

DSCI0006.JPG

Snack plate 1 (new earth balance creamy PB... fan!)

DSCI0007.JPG

Blurry snack plate 2

plus 2 graham crackers

Pre-bio I had intentions to cook a legit meal tonight, post bio

DSCI0008.JPG

Omelette with red pepper, mushrooms and nooch, steamed broc and toasted ezekiel english muffin with smart balance, cinnamon and honey

Dessert was the last of the cookies my friend made plus some ginger snaps, a dark chocolate square and 2 salt water taffys

I'm now finally brain settled and having a mug of cereal with banana, see you in the morning!

Peace!

Caitlin

How organized are you? Do you get anxious when your organization gets thrown off? VERY and extremely but I'm working on it!

Not just coconut?

Some foods I love

Eggs

Coconut

Cheese

Foods many people love

The ones above plus...

Bacon

Burgers

Dark meat

Pork Chops

What do all of these have in common? The are full of the "bad", artery clogging, heart attack inducing, LDL cholesterol raising saturated fat (given coconut is a different kind, which as food bloggers we all know is good for you!). However due to the fact that my favorite part of the egg is the yolk (which has the fat) I was thrilled when a came across an article in this magazine

DSCI0005.JPG

New Views on Saturated Fat

DSCI0002.JPG

"A meta-analysis of 21 studies... published in the March 2010 American Journal of Clinical Nutrition found no significant link between saturated fat and increased risk of heart disease."

WHAT??

Apparently this was the theory for so long because people who have diets high in saturated fat have a tendency to also have diets high in sugar, refined carbs and trans fat, which ARE tied to heart disease.

So the bottom line is, eat you eggs with whole grain toast =). Which is exactly what I did!

DSCI0009.JPG

2 eggs (with yolk) scrambled with spinach and yellow pepper, whole wheat toast with the last of hummus (we need to use food) and jelly, sugar snap peas.

Something will be had for dessert and a snack (and a few more) will come soon enough!)

Peace!

Caitlin

What is your favorite food with saturated fat? Somebody say something other than coconut =P.

This One's for Janae

Did you all see my afternoon post? You should check it out!

I spent the morning reading at the pool.. standard.

I may or may not have also spent about 20 minutes swimming in the pool pretending to be a dolphin....

For lunch today I had what started as an omelette and turned into an egg mess.

DSCI0002.JPG

One egg plus two white with black beans and a bunch of veggies topped in ketchup. Fruit salad on the side.

I went to the pool to read but am unfortunately very sun sensitive which began to show so I headed upstairs to spend some time in the kitchen!

DSCI0001.JPG

Quick snack of snap peas, almond butter and triscut thins, I would have had more crackers but I saved room because I was making Allie's Banana Bread Oat Bites !

DSCI0045.JPG

I subbed raisins and craisins for dates and added a tiny bit of honey.

DSCI0008.JPG

Snack for me and PerMa, topped with PB. These are so good! You must try them, they are also insanely easy!

We also had a can of kidney beans to be used so I made up some dipDSCI0023.JPG

DSCI0024.JPG

Hand mashed because I did this...

DSCI0002.JPG

woops...

Dinner was eggplant "pizza" on toasted flatouts and a lovely small salad! Simple and delish!

DSCI0047.JPG

Caitlin

What's you favorite kind of candy? I don't eat that much candy besides dark chocolate which I love but I am a big fan of gummy bears when I have the urge!

Favorite ice cream flavor? I really do love all flavors but gun to head I'd say strawberry cheesecake
