I've got recipes so let's get to it!
For lunch I had a PB&J on whole wheat with veggies and hummus for dipping on the side. Just for the record I packed this up yesterday before I knew about the holiday today... PB just calls to me =).
Snacking was excellent and creative if I do say so!
I made a parfait with greek yogurt, banana, wheat germ and the reminisce of my strawberry fruit spread in the jar, so good and no waste!
Dinner was inspired by the lovely Averie at Love, Veggies and Yoga
Apple Cinnamon Baked Tofu
Serves one
Ingredients
1/4-1/3 block firm tofu
1 apple-cinnamon tea bag
1/2 tsp honey
cinnamon (as much as you want)
How To
Put a small amount of water in a dish or tupperware, heat up and steep the tea bag. Add honey, cinnamon and tofu
Allow tofu to marinate for 2 hours to overnight. Place on aluminum lined baking sheet, bake at 425 for 20 minutes or until desired consistency is reached.

Cinnamon Spiked Tahini Yogurt Sauce
2 Tbsp plain greek yogurt
1 tsp tahini sauce
1 tsp lemon juice
cinnamon sprinkled
I will surely continue to celebrate tonight with pretzels and peanut butter... no shame people, no shame ;).

ReplyDeleteI still have never tried tofu or tahini on its own (only in hummus). Speaking of never had, I've never had wheat germ either! Is that similar to oat bran??
