Happy March! The best thing about March first? It's Peanut Butter Lover's Day!!! Dream come true no?
Peanut butter is amazing for you, it is high in healthy fats and protein so it really fills you up. It is also a decent source of carbs making it perfect for athletes.
Peanut butter has a good amount of vitamins and minerals as well including
Vitamin E
Vitamin B3
Iron
Potassium
Magnesium
Copper
Calcium
Something very unique about this amazing food is it also contains resveratrol which can ward of infection causing pathogens such as bacteria and fungi.
The bottom line is, eat your peanut butter! Or I'l eat it for you ;).
Last night I had a lovely little snack/dessert plate of oat sqaures, craisins, mint dark chocolate and a little milk seen in the back for cereal dipping
And to start of peanut butter day had my favorite pre-workout snack followed by my standard Tuesday workout .
Unfortunately breakfast did not contain the amazing food that we're celebrating today using it up means eggs for dinner
And eggs for breakfast. Egg + whites scrambled in some smart balance light and garlic with mushrooms, spinach and nutritional yeast
Plus cubed nuked sweet potato. By the way I realized I also have quite a decent amount of sweet potato to use... meals will be more redundant than I anticipated.

How will you celebrate national peanut butter lovers day?
Anyone have good ideas for my food abundance? I have yogurt, sweet potato, eggs, baby carrots, spinach and hummus to be used!
I'm allergic to PB, so I celebrated with soy nut butter instead. Close enough, right? ;)
ReplyDeleteHaha I'm always struggling with trying to use up my food because I always buy WAY too much. For the sweet potatoes, you should try Caitlin's (Healthy Tipping Point) sweet potato-black bean-flax balls!
I love a day that celebrates one of my favorite foods :) I'm eating some PB right now, actually!

ReplyDeleteHaha! When I first saw your sweet potato, I thought it was pieces of salmon! I was like, "Wow, THAT'S an interesting breakfast idea!" Lol! Savory to the max!
ReplyDeleteSweet potato yogurt is really good! Just mash a cooked sweet p and mix it in yogurt, then top with whatever your heart desires! Also, I've seen a lot of bloggers put it in spinach wraps with hummus! That would take care of a few things for you! Heck, you could shred some carrots and throw those in two! ;)
