High Protein Sweet Potato Breakfast Bowl

I loved this morning's breakfast so much that I came to the conclusion that I would share the actual recipe with you!



Ingredients
1/2 leftover baked sweet potato (or one small baked sweet potato)
1/4 cup Bob's Red Mill TVP
1/2 cup skim milk (or milk of choosing)
2/3 cup greek yogurt (I use plain non-fat)
About 2 TBSP raisins
Around 5 chopped walnuts
a bloob (maybe 1/2 tbsp?) coconut butter
Cinnamon (as much as your heart desires)


How To
Mash up the sweet potato once it is baked (skin optional) and combine in a bowl with TVP and milk, microwave for about 3.5 minutes stirring occasionally.

Once everything is all warm and whipped together top with yogurt, raisins, walnuts, coconut butter and cinnamon. Shredded coconut would probably be good too.


Incredibly easy and AMAZINGLY delicious! Although I didn't like it....
That's why the fork AND spoon had to come out at the end... maximum bowl scrapage potential
